That looks like a good list.  There are some "subjective" items however, where you'll have to do some supervising.  I had a work study kid (percussionist) who wasn't happy about his work assignment.  We had a bunch of new studio pianos and the hammer flange screws needed to be tightened.  He tightened!  He managed to split several flanges before I stopped him.  On your list you'll have to spend some time explaining how wobbly is wobbly with key bushings.  Unless he's upset with his work assignment, he should be able to learn enough to be helpful.
