Titebond is stronger than some woods, especially soft woods like key mortises and some damper blocks. Hide glue comes apart easier in the applications than Titebond would. Hide glue is a good filler, sets quickly (or not with salt or some other slowerer), cures in 24 hours, applies easily and comes apart easily. I am sure others can come up with many other advantages.
