That depends on how thick the block is and on how thin the plies are.

True, for the lumber-core ply material that is used in some piano case
construction the plies must be balanced.  And if you've ever tried to veneer
just one side of a thin panel you now understand why you should have
veneered both sides.  But, with a panel the size and shape of the piano
pinblock, and if you're using plies of, say, 2 to 5 mm thickness, it really
doesn't matter.
