Depends upon many factors but what you want to get is the sound you
like to hear.

The better the microphone the better the recording.  Recorders are
of less consequence unless they are mechanically inferior.

Things to avoid,

Use a cardioid instead of an omnidirictional mic
Avoid hammer impact noise
avoid mechanical noise from the action  and pedals
Miking closer is better than further
Use two mics if possible, one in the bass one in the treble.
Using one mic place in the middle of the soundboard
Use new blank tape
