Hi Paul,
I've always drilled blocks in the piano after everything is screwed down,
glued in, and sternly instructed to not move. It never occurred to me that
flexing after the fact might affect pin torque. I do it this way to better
center the bit in the plate holes and to more easily establish and set my
pin draft angle.
