What came to my mind almost immediately was the idea of attaching a device similar to what you'd find on an old reed organ, one of those knee operated paddle shaped devices that more or less fold out of the way when not in use.?? Leverage might be one of the big concerns, though, depending upon how "heavy" the sustain pedal is to operate in the first place. They're not all the same.
