Greetings, Like Roger, on the concert pianos, I end up restringing the top half in between full stringings, so I back those pins out 1/2 turn, wind new coils on dummy pins, and usually turn them in about a 1 or 1 1/2 turns. Sometimes I even tap the pins down to their minimum clearance at this time. I am usually conservative in the bass, and usually just go up one pin size, unless things were really loose, then 2 sizes.
