cold hide glue shelf life

I don't have a definitive answer for you, but I do have an observation.

Recently I was gluing a soundboard panel to a fake rim to make a belly =
display. I used Franklin cold hide glue. Knowing that it was not going =
to be part of a real piano, I chose to use a bottle of glue that I knew =
had been sitting around longer than I was comfortable with (long ago I =
chose not to use it on a real piano). While applying the glue to the =
fake rim, the glue started out nice and transparent like hide glue =
should be. The last bit though came out cloudy. When I clamped some of =
the glue ran out from the joint and onto my work table. After cleaning =
up the rim, I went to clean the table - the clear glue had dried and was =
hard but the glue that came out cloudy was still sticky.

So from this one experience I observed that old hide glue that is clear =
may still be good, while cloudy hide glue may not yield a good bond. I =
don't know if that is a definitive relationship, but I do know that if I =
ever see cloudy hide glue, I won't use it.
