I've thought of using old boards for shims, it seems to me they would have to be laminated to be thick enough, as long as you had the glue joint buried in the board so it wouldn't show, it would work out. It would be a shame to plane down to a glue joint, right when you were level with the board. Spruce back posts from old uprights would be great.
