Sure, how 'bout laminated quarter-sawn hard maple? Seriously though, just a 
guess, but I should think you'd be better off with something closer to the 
original - spruce - so as to allow for some adjustement. Or, if the mortises 
are well centered on the keys, perhaps it would be best to simply plug with 
wood of choice and rout out a new mortise - wouldn't that be easiest and 
guaranteed to make like new?
