Matthew, If I understand you correctly, you will be unscrewing a manifold with a leather gasket in between. If the piano has been restored you should have no problem. If the piano was playing before any number of things might go wrong, not at all your fault. The hoses and tubing can be very brittle, or have a "set" where they attach to nipples. The screws in the manifold might be stripped or strip the wood on re-tightening. If there are cross leaks between the holes in the manifold gasket the player will not function correctly. 
    Most player actions are removed by undoing the air motor supply hose on the treble, unscrewing large bolts or screws on each end, unlocking all linkages to the tempo lever and play/rewind levers, and gently sliding the action forward a little to clear the whippens, then up on the bass side to slide off the large supply hose for the stack. This is for the upright.
    Grand players are different for the three main makers. If you are speaking of a Duo Art, there are indeed manifolds under the keybed in early models and a manifold on the bass side, as well as the air motor supply hose in the treble. 
    What is the brand of the piano, or do you know the player action maker? A photo would help greatly.
