In MHO, the first thing that needs to be  done, is to convince the customer that his/her piano is NOT a VALUEABLE ANTIQUE, as in priceless/collectable/on a level with the missing Strad! Sheesh! 
The Term "Restore" is a royal ambiguous pain in the arse!  It is used by clients to mean damned near anything. 
Secondly, educate the client as to what Rebuilding is. Or, What Remanufacturing is. These are the terms that will give the client something to sink his/her teeth into.
As for the really dumb questions, like, "what kind of wire does Steinway use?" Who really cares, since we all know that the only consistency is a total lack of consistency with ALL manufacturers. Another "Sheesh!)!! 
If the piano is a good quality German Upright/Grand, with decent design, then it will be worth Rebuilding. If it's a really bazaar German Upright/grand, then it will need to be Remanufactured to modern concepts/parts, etc.! End of story.
