Have you condidered having a custom cup made that could replace the square one on a spider dolly? It could be wide enought to hold both legs and with the right kind of reinforcement would support the weight. The two legs support the same exact weight as one single leg so the dolly should be able to handle it. You could even design it to let the piano sit a little lower than it normally would on a spider dolly which would help eliminate the problem of the pedals sometimes being too far off the ground. Just a thought.
