Well I can see the concern for the keybed flexing to the point that the drop screws are pressed into the pinblock on some grands.  Keybeds that are sectional, hollow, lacking the substantial cross member or thin are to be considered for this.

In the case of a player installer (PianoDisc and Pianomation for instance) the action is typically not in the piano's action cavity at the time the piano is tilted up on to it's legs for the remainder of the installation.  Still, I have seen some fairly thin keybeds on some older grands that shouldn't be tipped over using this method.

Typically most modern grands have a keybed that is close to 2 inches thick.  Add to that a substantial amount of metal channel across the majority of the keybed span, treble to bass, and you have sufficient support to gently rock the piano up on to it's legs or vice versa.  Years ago Yamaha printed on the side of their crates unloading instructions that included this very process using their own lyre as the support.

As always, a good mover assesses each and every move prior to implementing a plan.  A good technician determines which tool, which method and what order to make a piano work well.  There's a right way and wrong way to do everything.
