I would use tulipwood (Am. 'poplar') as well.  The birch ply we have 
here is certainly of good quality and extremely well stuck together 
but there is one very good reason why birch is not a good choice and 
that is that the furniture beetle will turn it to powder in a very 
short time.  I think this is the reason why it is so rarely 
encountered in pianos in Europe, whereas tulipwood was used in vast 
quantities in the old days.
