Hi Roger, Only the damper pedal is truly indispensable, but the una corda and 
sostenuto do have musical value. Joseph Hoffman, one of the most renowned of 
pianists from the past used to have the sostenuto pedal removed because he was 
afraid of treading on it by accident. Years ago most Steinway uprights were sold 
with two pedals. The third pedal was optional and was a sostenuto. A wretched 
design though.

Hi Ted,
             Now here is a thought. Lets make vertical pianos with only one 
pedal. The touch goes south once the Una corda is depressed, and is of 
questionable value.  We need to be like the car makers, one pedal standard, 3 
pedals becomes an option, with LTD on the fall board. :-)
