A piano can change pitch in but three minutes.  I have had them go out
of tune right under my hand while tuning.  A winter dry board can
absorb mousier when the outside doors are opened for a load in.  It
takes 30 minutes and more for it to come back down to to near where it
was.  This is a royal pain on stage.

A hot dry draft can effect a piano immediately in the opposite
direction.
