Just a couple of experiences.

We stripped an old black Steinway A and found five different
types of wood underneath.  Unfortunately the customer wanted
fruit wood.  The finisher nearly went mad.

We got in an old Knabe grand with book matched crotch walnut
and the customer wanted (insisted upon) it finished in
ebony.  I could have cried.
