Actually hominy isn't that bad.  And it is made with lye.  Grind it up and
you have grits.

Who thinks of this stuff anyway?  Take perfectly good corn, dry it until
it's hard as rocks, soak it in lye until it bloats to a grotesque size, then
grind it up and serve...bon appetite!
