Ryan, the data from the loggers both Barbara and I are referring to is in a
simple txt format. Very easy to import into Excel if you want to break it
apart and form your own graphs. You can program the logger to sample from every
10 seconds (45 hours of data) to 12 hour intervals (>2 years). Every 5 minutes
will record data for 56 days.

It looks like the Humidity/temperature with the digital display is $89. Does
that include the software? With the other one I was looking at, you had to buy
the software separately.
