I don't know how setting a temperament and tunning are related. According to the dictionary, a tun is a cask that holds 252 gallons of beer or wine. So I guess tunning would be the process of emptying that cask. If that's the case, in my opinion, I do like to drink, and for that amount, I would do it very slowly, over a long period of time, preferably with friends at a picnic on a holiday.
