Dip or Key dip is the distance the key travels from rest to the bottom of the keybed: its travel distance. This distance is measured with a dip block, available from piano supply houses.

I guess key depth is another way of describing dip/travel, however, dip or key dip is the most widely used term to describe a key's travel, because in another context, key depth could mean the actual dimension of the key stick itself, i.e. as a synonym for key height; (as in when length, width, height of a key stick is described) I avoid the word depth and use the word dip, when talking about regulation. Its a personal preference thing, although I have heard the word depth to mean dip.
