Question: What's the difference?

At best, an electronic "piano" emulates the recording of an acoustic
piano.  It cannot really replicate it because, as others have mentioned,
the sound comes from speakers rather than a soundboard.  Furthermore, it
is more like a mathematical construct of a piano and can therefore
produce only the main parameters of piano sound in distilled form and
not the full sound, which includes many unpredictable and individual
qualities.

The difference is like drinking distilled water from a bottle compared
with drinking spring water fresh from the source or like a machine made
carpet vs. hand woven.
