Phoenix, AZ has no water in the air.  At 10%, expect the two days a
year it rains, there is no water removal with refrigerator type air
conditioners where you live.  You are like using evaporative type
coolers that actually do put water into the air.

If you lived where the humidity is 95% and the temperature is 95
degrees a evaporative type cooler will not work at all because the
moving air cannot absorb more water so refrigerator type air
conditions are used that DO remove water from the air, thirty to
fifty GALLONS a _day_ or more, depending upon space size.  Part of
the removed moisture is used to cool the condenser, which gets hot
from heat exchange, the rest is allowed to run down a drain or
accumulate in a pool outside.

You car air conditioner is not an evaporative type.
