Hide glue(s) used in piano construction

Hello!

What kind of glue is the "hide glue" used in piano construction (gluing
soundboards, ribs etc.)? I have seen here 3 kinds for sale, one is called
"bone glue" - comes in small transparent brownish pellets, the second "fish
glue" - comes in transparent yellowish sheets; the third is called "rabbit
glue" - opaque brown small pieces, like shredded spaghetti.
So which one of these is what you use?
