The backing on roll insulation is not all that effective as a moisture
barrier. Maximize your moisture barrier at not much cost, slash the backing
on your roll insulation with a razor knife. Then staple up heavy (3 mil)
plastic to cover the walls and ceiling as seamlessly as possible. Then
finish with paneling, drywall, etc.  Not much cost and way more effective
than the backing on the insulation. Slashing that backing will prevent any
moisture that makes it through the plastic from getting trapped between the
two barriers.

The insulation I used does not have the foil backing,
just paper, but it is the thicker of the two values
that were offered.  Since my dehumidifier drains into
the sink, I don't know how much water it is
collecting.  It probably shouldn't have to run all day
however.  Another factor is the poor seal on three
garage doors that are on the shop.  The rubber gasket
at the bottom of the door does not form a good seal.
I will eventually completely seal off two of the
garage doors and replace the other with two big
swinging doors. The floors will get painted and sealed
and this will help as well.

On the topic of humidity I am going to put a new post
out inquiring about providing humidity control for a
stage box that stores a concert piano.
