Finish Over Polyester?

Yes, you should be able to. Prep polyester surface like you would any metal
or wood surface and spray away. You might want to test an inconspicuous spot
first, just to make sure the solvents in the lacquer aren't going to melt
the polyester.

Your polyester music desk is pretty much the same material as a Corvette or
a fiberglas boat - you can paint those with just about anything.
