Partial list, in the action:

 Keysticks typically sugar pine--strong and light
Hammer moldings typically mahogany, hornbeam, other tough hardwoods
Flanges mostly rock maple--not the easiest to machine but think about how well they hold up dimensionally and wear-wise even after 100 years of service
