Wouldn't that then create some problem in terms of the stresses in the panel if you put a finish on one side, dry the panel down and then glue the ribs onto a somewhat warped board? The cells on the surface have filled with finish, and there is a slight physical constraint there, so it'll be straight when the MC is uniformly where it was when the finish was applied. Ron N
