Even using an EDT the EDT only tunes one string.  Our ears tune the unisons.
Yes, you can hear everywhere just fine including the upper treble with ear
plugs in provided you use the right ones.

Actually it is easier because the static of the super high partials  
and other noise is attenuated leaving you with the partials you  
actually work with standing out clearly.  It is counter-intuitive but  
after trying it, I have to stick them in to hear like I want to up  
there.
