It's whatever is needed to raise the hammer to within 1/16" from the strings, go through let-off and then have a bit of aftertouch - maybe 0.025" or so - personal preference. And that of course is tempered by personal preference for overall key dip. You will find a number for the questions you asked, but they won't necessarily work.
