<if left original, how best to remove as much old gook as possible 
WITHOUT degrading the finish any more than it is.

Terry, on what sounds like a similar project, Murphy's Oil Soap diluted 
as per bottle instructions worked fine.  The plate finish was okay-ish 
to start.  The soap cleaned things up fine.  On mine there were some 
paper decal like things which I had to carefully avoid, but as the 
country auctioneer said, "its in good condition for the condition its in."
