It is true that grand piano rims are usually made this way -- well, at least they are these days. Rather than beginning an in-depth study of grand piano manufacturing, might I suggest a couple of books that might be of more immediate help: 1) Fine WoodWorking On Bending Wood, 1985, The Taunton Press, ISBN 0-918804-29-9 2) Wood Bending Handbook, 1970, Compiled by the Forest Products Research Laboratory, Buckinghamshire, England. Published in the US by Woodcraft Supply Corp. There are probably several more recent works on the subject; I'd suggest a visit to a good library and/or a large hardwood supplier or woodworking supply store. There are also ads for book stores specializing in woodworking books in magazines such as Fine Woodworking. Good luck.
