Since the old harpsichords used ebony for the naturals , I'd consider a thin ebony plywood. You can make your own or purchase very thin ply from a woodworking supply house and glue ebony on top (veneers can be had very thin these days), then use it like the old sheet ivorine. For the sharps, the simplest way is to shave the tops a bit (use a jig with a router or belt sander) and glue old ivory tails on top. You could also glue on a light veneer (like holly) with epoxy.
