In addition to the fireplace, where is the piano in relation to the kitchen 
and the laundry room? The fireplace that is used frequently dries out the 
room tremendously. Then when the humidity from the kitchen and/or the laundry 
room comes around, the humidity goes back up. That is why the tuning won't 
hold. 

The key level problem might be related. Is there a change in lost motion? 
With the swings of humidity, the back rail might be fluctuating, which will 
cause the back of the keys to loose contact with the wippens. Free floating 
keys will look like a bad job of key leveling.

If the back rail problem will not be taken care of with humidity control, you 
might want to put a piece of angle iron under the back of the keybed.
