Damper pedal modifications

If she really can't use her right foot, on a grand piano you could remove 
the center pedal, then reverse the right and left pedals so they both curve 
in toward the center. This way her left foot stands a chance of reaching the 
damper pedal.
Beyond that you get into some fancy re-engineering to move the lyre to the 
left.
