[pianotech] Knuckle Direction

I saw a Kawai technician from Japan set the knuckles this way on an
EX. I learned at NBSS that there was a debate about the nap direction,
and I thought this way was more common now, so I was a bit surprised to
learn that Yamaha prefers the other way.
