Leslie and List:
I keep seeing people talk about the strong odor of hide glue.  I wonder
if you're using good quality glue.  The blond colored glue indicates less
fat content which is the source of the odor (darker brown is not good
glue).  I get mine from Pianotek.  It's very lite in color and it doesn't
smell strong.  Maybe it's because I'm Cajun and we eat anything (we eat
anthrax, too), but the smell of THIS glue doesn't bother me.  Very short
people who often have to stand in crowded elevators usually use the glue
with a high fat content.  Also look at the archives, they just recently
discussed additives like camphor, etc., to aid in the smell.
Give hide glue a chance!  Good luck.
