Just create a spreadsheet with columns denoting the information you feel
relevant to your business needs and desires.  You can have the columns add
or subtract automatically by entering formulas.

I currently use across the top of said spreadsheet such headings as:

Date
Description
Inv. #
Paid
Gross receipts
Labor
Sales
Sales tax exempt
Sales taxes payable
Cost of goods sold
