A 5 - 10 minute tuning is basically a touch up. It would involve listening to 
a note, (all three strings), and identifying an out of tune string, and 
fixing it. It would be almost impossible, (except for Steve Fairchild), to 
tune a whole piano, moving every string, and move the hammer any faster than 
that 10 minutes. 

Raising pitch from 100 or 200 cents flat is no difference than rasing pitch 
from 10 cents sharp. It does not take any appreciable more time to crank a 
note 100 cents as it does 10 cents. But It is the last 4 or 5 cents that are 
crucial in a pitch raise. That is when you might want to slow down, and get 
the string in tune. Having said that. I can do a quick one pass on a pitch 
raise in about 10 minutes. (not counting taking off the vase parts, and 
putting in the temperament strip) I am not listening to beats, or intervals. 
I am just getting the string within that 4 or 5 cents, so I can work on a 
stable tuning the next time.
