I've always done it the same way except I use my thumb, I don't have an
insta-coiler, I'm not sure they were around when I started out 38 years ago
but I've always had my thumb!  <g>
You just have to remember to lift it as the sharp end of the becket comes
around or you lose a piece of meat out of your thumb or wrap it with duct
tape!
