I'd suggest taking your I-beam at least one truss farther in 
both directions than you'll ever have the hoist positioned so 
you can't have a big load on the end of the beam, concentrated 
on one truss. How wide is the shop, by the way? If you can get 
the I-beam spanning from wall to wall (supported to the 
floor), and hung from the trusses in between, you could safely 
lift four times the capacity of your hoist - if you could lift 
it at all.
